Hungry adventure friends, today we bring you the ultimate excursion snack (this may be my bias because they are my favorite): Peanut butter cookies!
There are tasty and healthy, but really high on the calorie count. So they are your best friends on more demanding activities.
WE use home made peanut butter. To make it we put unsalted peanuts into a food processor and add a little bit of vegetable oil.
Sometimes we cut down on the sugar by replacing some with honey.
makes 18 portions
Ingredients:
½ cup of butter
½ cup of brown sugar
½ cup of sugar
1 egg
½ cup of peanut butter
½ teaspoon of vanilla extract
½ teaspoon of salt
½ teaspoon of baking soda
1 cup of whole wheat flour
Instructions:
Preheat the oven at 180°C
In a bowl whisk the butter until it is creamy. Add all the sugar, whisking until creamy.
Add the egg, the peanut butter, salt and baking soda
Add the flour, little by little, making sure it is thoroughly mixed
Add the vanilla.
On a butteres oven try pot small balls of the dough separated by about 3 cm. Squish the balls with a floured fork.
Cook at 180°C for 10-12 min or until they start to turn golden brown.
And voilá! Awesome biscuits to keep you going on long treks or exhausting activities.
