Hungry adventure friends. Today I bring you our best healthy and caloric combo: the date squares. Excelent for winter sports, or cold outings on a mountain, or any other really demanding activity. Also good if you want to indulge in something really nice and sweet.
Also, if you want to go the "healthier" rout, or just want to enjoy them without the heavy excersice part. You can replace the flour for whole wheat flour and use a third of the sugar.
This uses a 9"x 3" mold
Ingredients for the dough:
1 cup of butter
1 cup of brown sugar
1 ¼ cup of oats
1 ½ cup of flour
¼ teaspoon of baking soda
1 teaspoon of cold water
Ingredients for the filling:
1 cup of water
½ cup of brown sugar
1 teaspoon of cornflour
500 gr of dates, chopped in very small pieces
1 teaspoon of vanila
Instructions:
Melt the butter until it's creamy, add the dough ingredients. First dilute the baking soda in the water to avoid lumps.
In a pot, mix the filling ingredients, except for the vamilla. Cook in low heat until it is creamy (about 8 min). Then add the vanilla and let the mixture cool.
In the mold, extend half of the dough, then extend the filling over that, and cover with the rest of the dough. Put into the oven at 375°f/190°C for 30 min.
And done! Cut it into squares and bring them with you on you long excursions.
