Banana Bread with Coconut and Walnuts


Hungry adventure friends, have you ever found yourself out on a trek and thought: "I could really use a snack?"?

Well, we have the perfect thing for just that scenario. Or for when you get the munchies for something sweet, your call. Here is the recipe for Jass' awesome banana bread. It is designed to give you energy and joy.

Ingredients:

4 eggs

1 ½ cups of sugar

1 cup of melted butter

4 really ripe bananas (mushed)

2 ½ cups of flour

1 teaspoon of baking powder

1 teaspoon of baking soda

½ teaspoon of salt

1 cup of grated coconut

1 cup of crushed walnuts

Instructions:

  1. Preheat the oven at 180°C. Butter and put flour on two large molds (4"/8")

  2. In a bowl whisk the eggs and gradually add the sugar and melted butter. Then add the bananas

  3. In a separate bowl, mix the flour, baking powder, baking soda and salt

  4. Put the two mixtures together and add the gated coconut and crushed walnuts

  5. Divide the mixture evenly into the two molds and put in the oven for 60 minutes at 180°C

Then you just enjoy this great recipe during your treks, or a picnic, or at breakfast. Or even during the "once" a very Chilean thing everyone should get behind.
